Can You Help A Sista Out?

Ok, peeps. I need your help.

Since the good ole economy is camping out in the toilet lately therefore forcing Spencer and I to be more frugal with the dollar, I am looking for some good, cheap, crock pot dinner recipes.

And I mean ANY recipe. Because my entire crock pot repertoire consists of 2 things. Queso and my mother-in-law's pot roast.

I'm not saying anything is wrong with that, but it definitely leaves me hanging for the other 5 days in the week....

Not to mention that I have a serious case of "oh my goodness it's 5:30 and I haven't even thought about dinner" itis. I think the occasional crock pot dinner will help with my planning ahead skillz.

I do subscribe to a website called E-Mealz. I have a button in my side bar that will take you there. It's really cool. They plan weekly menus for you and give you an itemized grocery list to the grocery store of your choosing. They also include ingredients that are on sale that week at your grocery store. And it's only 5 bucks a month. I don't like everything they plan on my weekly menus, but I have found some really good recipes that are easy to make. Anything that makes mealtime easier definitely gets my stamp of approval. You can go to their site and see an example menu. Click on that button and mosey on over there.

Add 4-5 boneless skinless chicken breast to your crockpot, then pour on a large bottle of BBQ sauce...set it on low all day and be done. I have served the chicken in whole pieces with mashed potates and sides or you can shred the chicken and serve on hamburger buns. For a Mexican twist, instead of BBQ sauce, use a large bottle of taco sauce. I shred this when it's done and serve on tortillas with cheese and taco fixings and taco rice. These are my stand-by crockpot recipes...they have never failed me! I even served the taco chicken version for a birthday party! It was a huge hit and so easy to make a lot of!

One of my favorites:

TACO SOUP

1 lb. hamburger (uncooked)
1 can corn
1 can kidney beans
1 can pinto beans
2 cans stewed tomatoes
1 can Rotel (your preference on the heat)
2.5 cups water
1 pkg. dry Ranch Dressing mix
1 pkg. dry Taco Seasoning mix
(Do not drain any juices from the cans)

Combine all above in large crock pot on high in the morning, and let cook until dinner time.

Serve on bed of tortilla chips and top with grated cheese and sour cream.

You can also cook on the stove: Bring all ingredients to a boil, then reduce and simmer for 30-45 minutes.

I love me some pot roast. This recipe is from crock-pot.com :
(I have used it several times & adjusted seasonings to taste.)

Classic Pot Roast of Beef

Cook Time
10 - 12 hours on LOW
5 - 6 hours on HIGH
Slow Cooker
5 - 5.5 Quarts

Ingredients
1 (3 pound) boneless beef rump roast, brisket of shoulder
1⁄2 cup water or beef broth
2 medium potatoes, thinly sliced
2 large carrots, thinly sliced
1 onion, sliced
1 teaspoon salt
1⁄2 teaspoon ground black pepper

Directions
1. Put vegetables in bottom of stoneware.
2. Salt and pepper meat, then place in pot on top of vegetables.
3. Add liquid.
4. Cover and cook on LOW 10–12 hours (HIGH: 5–6 hours). Makes 12 to 14 servings.

(Again, I adjust seasonings & ingredients according to what is in the pantry.)

Beef Stew

Cook Time
4 - 6 hours on LOW
2 - 3 hours on HIGH
Slow Cooker
5 - 5.5 Quarts
6 - 6.5 Quarts

Ingredients
½ cup flour
1 teaspoon salt
1 teaspoon pepper
4 pounds beef chuck, cubed
Olive oil
2 onions, sliced
1 cup mushrooms, sliced
1 cup fresh parsley, minced
6 teaspoon minced garlic
4 bay leaves
2 cups red or white wine
1 cup beef broth

Directions
1. Mix the flour, salt, and pepper. Dredge beef in flour and add coat the bottom of a skillet with olive oil. Place skillet on stovetop set to medium-high heat. Heat oil and sear beef on all sides.
2. Add meat and remaining ingredients in stoneware, cover; and place stoneware in slow cooker heating base. Cook on Low for 4-6 hours or on High for 2-3 hours.

Now I'm off to the store to buy a few ingredients to throw in crock pot!

Crock Pot Chicken-

4-5 boneless, skinless chicken breasts
1 can cream of mushroom soup
1 pkg. Good Seasons Italian dressing mix
1 8 oz. cream cheese, softened
1 cup white wine (or chicken broth)

Add chicken in crock pot. Mix the other ingredients in a bowl and pour over the chicken. Cook on low 8 hours. Serve over rice.

Crock Pot Beef Tips

2 lbs. beef round chunks
1 can petit diced tomatoes, undrained
1 pkg. beef stew mix

Add beef in the crock pot. Pour in tomatoes and beef stew mix. Stir to mix it all together. Cook on high 4-6 hours or low 8-10. Serve over rice or mashed potatoes. **I also add baby carrots in at the beginning.

Beef 'n Noodle Stuff

1 1/2 - 2 lbs stew meat
can of cream of mushroom soup
can of cream of celery soup
can of french onion soup

Place meat in crock pot. In bowl, mix all cans of soup. Add some salt & pepper. Cook on low for about 8 hours.

Serve over egg noodles or rice.

I read a newspaper article that referenced this blog: http://crockpot365.blogspot.com/. I shared the site w/ some friends who have all had good results w/ the recipes on here. The lady who wrote the blog is funny & honest about which recipes were a hit and which were a dud. HTH!

Easy recipe that my whole family loves!! You can do the boil-in-the bag 10 min. brown rice right before you serve this.

Crock-pot Beef tips:

1 or 2 packs Stew meat--brown it in a skillet with a little olive oil before you put it in the crockpot

1 can French onion soup
1 can Golden mushroom soup
1 can beef mushroom soup

Put browned meat and soups in the crockpot on low for 6 to 8 hours. The meat is so tender!! Serve over rice.

My kids love mushrooms so I add a small can of them when I put the soups in.

CHEESY CROCK POT CHICKEN Recipe
Ingredients:
• 6 chicken breasts (boneless & skinless)
• Salt and pepper to taste
• garlic powder, to taste
• 2 cans cream of chicken soup
• 1 can cheddar cheese soup

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in the crock pot. Cook on low 6 to 8 hours. Serve over rice or noodles


Broccoli Rice and Chicken
Ingredients:
• 2 pounds chicken tenders or boneless chicken breasts cut in strips
• 1 1/4 cups uncooked converted rice
• 1 package Knorr's Cream of Broccoli Soup Mix
• 1 1/2 cups chicken broth
• pepper, to taste
Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.



Nancy’s Easy Chicken
Ingredients:
• 1 can of cream of celery soup
• 1 can of cream of chicken
• 2 cans of cheddar cheese soup
• 4 to 6 chicken breasts
Place soups and chicken breasts in slow cooker. Cover and cook on low 5 to 6 hours or until chicken is thoroughly cooked.

I will personally vouch for anything Joy Coon suggests. That girl can cook. And lucky for me, I can eat.
I was going to suggest taco soup but somebody beat me to it. I love some BBQ pork- get a boneless butt and throw some BBQ sauce on it- 6-8 hours later make you some Baked beans and some frozen french fries and you're good to go.
